1 Tbspfresh ginger, minced

2 Tbspvegetable oil

1 1/2 clong-grain rice, uncooked

2 1/4 cchicken broth

1/4 ccoconut milk

1/4 craisins

2 Tbsplight soy sauce or tamari

1 Tbspfresh lime juice

1 Tbspcurry powder

1/2 tspchinese chili sauce

1/2 tspsalt

1/2 tsplime rind

1/2 cgreen onions, chopped finely

1/2 cfresh pineapple, diced

1/3 ctoasted slivered almonds

2 Tbspfresh lime juice
How To Make tasty thai-style fried rice

1In a large skillet, saute ginger in oil until tender.

2Add rice to the skillet, stirring well to coat - approx. 5 minutes. Add broth; then add coconut milk through grated lime zest.

3Bring rice to a boil; then reduce heat and simmer (covered) about 20 minutes until rice is tender and liquid has been absorbed.

4Once done, add green onions, pineapple, almonds and lime juice.
