This is super easy, super tasty. If you have homemade sofrito, ll the better, but you can certainly use store bought and it'll be fine. I use this as a side dish and as a main course.

Ingredients For super easy puerto rican rice and beans

    16 oz cans goya red or kidney beans
  • 1 lg
    waxy potato, cut to 1/2 inch dice
  • 1
    packet goya sazon con culantro y annato seasoning
  • 1
    16 oz can tomato sauce
  • 1 1/2 Tbsp
    homemade sofrito, or packaged - i use goya
  • olive oil
  • salt to taste
  • cooked rice, any kind

How To Make super easy puerto rican rice and beans

    In a pot, sauté the sofrito in a little olive oil for a couple of minutes.

    Add all the remaining ingredients except the rice and cook covered until the diced large waxy potato is tender.

    Serve over rice.
