This recipe is off the back of a package of enriched long cooking white rice. I changed a couple of things up to add a little more zip. Not much tho. just a little.

Ingredients For spanish style chorizo fried rice

  • 4 c
    cooked long grain white rice
  • 4 Tbsp
    olive oil
  • 4 lg
    chorizo sausages, sliced on angle
  • 2 md
    celery sticks, sliced on angle
  • 1 sm
    bunch fresh thyme
  • 1/2 can
    diced tomatoes, (14.5 oz. size can)
  • 1/2 can
    rotel tomatoes, mild or hot, your choice
  • 1 tsp
    garlic powder
  • 1 md
    onion, diced
  • dash
    salt and pepper to taste

How To Make spanish style chorizo fried rice

  • 1
    Heat olive oil in non-stick pan, add chorizo sauages, celery, onions, stir on medium to medium high heat until sausages are cooked.

    Add thyme, both kinds of tomatoes, garlic powder, salt and pepper. Simmer this uncovered for 5 to 10 minutes.

    Add the cooked rice and stir to mix well until rice is hot. Sometime after adding the cooked rice I pour into a casserole dish and heat in a 325* oven until hot.
