My friend Elva taught me how to do "authentic" Spanish Rice - so this is just as good as you get in any restaurant.

Ingredients For spanish rice

1 Tbspvegetable oil
-
1 cwhite rice (regular or converted, but not instant)

2 Tbspchopped onion
-
1 clovegarlic, minced or pressed through garlic press

2 cwater or chicken broth
-
2 tspchicken bouillon granules (if you used water)

2 Tbspchopped peeled tomato (i use some canned diced tomatoes)

1/3 cfrozen peas or mixed vegetables

1/2 tspground black pepper
How To Make spanish rice

1In a heavy saucepan, sauté rice in oil over medium heat until rice is brown. Add onion and garlic; sauté another minute or so.

2Add remaining ingredients. Cover; bring to a boil.

3Lower heat and simmer approximately 15 minutes or until all liquid is absorbed.
