My friend Elva taught me how to do "authentic" Spanish Rice - so this is just as good as you get in any restaurant.

Ingredients For spanish rice

  • 1 Tbsp
    vegetable oil
  • 1 c
    white rice (regular or converted, but not instant)
  • 2 Tbsp
    chopped onion
  • 1 clove
    garlic, minced or pressed through garlic press
  • 2 c
    water or chicken broth
  • 2 tsp
    chicken bouillon granules (if you used water)
  • 2 Tbsp
    chopped peeled tomato (i use some canned diced tomatoes)
  • 1/3 c
    frozen peas or mixed vegetables
  • 1/2 tsp
    ground black pepper

How To Make spanish rice

  • 1
    In a heavy saucepan, sauté rice in oil over medium heat until rice is brown. Add onion and garlic; sauté another minute or so.

    Add remaining ingredients. Cover; bring to a boil.

    Lower heat and simmer approximately 15 minutes or until all liquid is absorbed.
