This is a very easy and basic spanish rice recipe that is our "go to" when we prepare Mexican fare.

Ingredients For spanish rice

1/4 cvegetable oil

2 crice, long grain

2tomatoes, diced

1 smonion, chopped

4 clovegarlic, minced

2 tspcumin

4 Tbsptomato paste

4 cchicken stock
How To Make spanish rice

1In a medium saucepan, over medium heat, fry rice in oil until slightly golden, about 3-5 minutes.

2Add cumin, onion and garlic and sauté 1 minute.

3Add tomato, tomato paste and chicken stock. .Turn down heat to low, cover and cook for about 20 mins, or until stock has absorbed/evaporated.
