This is the best Spanish Rice recipe I've ever had. I found this years ago on the internet, tweaked it a little bit to my liking and have never bought a box of pre-made spanish rice since! Tons of flavor and so quick and easy! Just tastes so fresh and light, goes great as a side to almost anything.

Ingredients For spanish rice

  • 1/4 c
    butter
  • 2 c
    uncooked instant rice
  • 1 can
    diced tomatoes, undrained
  • 1 c
    boiling water
  • 2
    beef bouillon cubes
  • 1 md
    onion, chopped
  • 1 clove
    garlic, minced
  • 1
    bay leaf
  • 1 tsp
    sugar
  • 1 tsp
    salt
  • 1/4 tsp
    pepper

How To Make spanish rice

    In a saucepan over medium heat, melt the butter. Add the rice and stir until browned. Add all remaining ingredients; bring to a boil. Reduce the heat; cover and simmer 10-15 minutes or until the liquid is absorbed and rice is tender. Remember to remove the bay leaf before serving!
