spanish brown rice
This is meant to be a side dish, however, I like to use this as a base recipe and add some cooked chopped chicken to it, then have it for a light lunch. Good to take to work for lunch, right? Add a side salad and you've got a fabulous little lunch for yourself!

Ingredients For spanish brown rice

3/4 cuncooked brown rice

1/2 csliced, fresh mushrooms

1/2red bell pepper, chopped

1/2onion, chopped

1/2 tspgarlic powder

1 Tbspbutter or margarine

1 cchopped tomato (if using canned diced tomatoes, drain first)

1 Tbspdried parsley
-
1 Tbspsoy sauce
-
pepper, to taste
How To Make spanish brown rice

1Cook brown rice according to package directions. Set aside.

2Sauté mushrooms, red peppers, onion and garlic powder in butter in a large skillet for 5-7 minutes or until vegetables are tender.

3Stir in the rice and remaining ingredients.

4Cook until thoroughly heated through.
