Ingredients For spam fried rice for 2

2 Tbspvegetable oil, divided

1egg, slightly beaten

ground black pepper, to taste

1/2 cchopped spam

1 clovegarlic, peeled and minced

1 1/2 ccooked rice, cold

1 Tbspsoy sauce, or more to taste

1/3 ccooked vegetables (peas, diced carrots, corn, etc)

2green onions, thinly sliced
How To Make spam fried rice for 2

1Heat 1 tablespoon oil in a large skillet or wok on high heat. Add egg, salt and pepper and lightly scramble. Remove to a plate.

2Add remaining oil to pan. When hot, add Spam and garlic and cook until lightly brown-DO NOT BURN GARLIC!

3Add rice (break up any chunks first). Stir in soy sauce and keep stirring until rice is heated through.

4Add cooked vegetables, green onions, and cooked eggs. Heat through and serve.
