Ingredients For southwest rice w/ tomatoes & black beans

1 Tbspolive oil

2 clovegarlic, minced

1 tspjalapeno pepper, finely chopped

1 can14.5 oz. can petite diced tomatoes

16 ozchicken broth
-
1 clong grain rice
-
2 tsporegano (or more to taste)

1/2 ccilantro leaves
-
1 canblack beans, rinsed and drained
How To Make southwest rice w/ tomatoes & black beans

1In olive oil, saute garlic, jalapeno and rice for 1-2 minutes - do not brown garlic.

2Add tomatoes and chicken broth and bring to a boil.

3Lower heat and cover. When rice is done, add oregano, cilantro leaves and black beans. Heat through and serve warm.
