Ingredients For sopa de arroz (mexican rice)

1 clong grain rice, uncooked

3 Tbspoil

1/2 smonion chopped

1 cloveminced garlic
-
1 smtomato peeled and chopped
-
1/4 cfresh or frozen peas and diced carrots

2 cboiling chicken stock
-
1 tspsalt
How To Make sopa de arroz (mexican rice)

1Saute the washed,drained rice in the hot oil until golden but not brown. Add the onion, garlic, fresh tomato and vegetables and cook slightly. Add the boiling stock and salt.Return to boil,then lower heat, cover and cook on low setting until rice is tender and liquid has been absorbed. Toss lightly with a fork before serving.
