Ingredients For side essentials: awesome spanish rice

2 Tbspsweet butter, unsalted

1 Tbspgrapeseed oil

1 clong-grain white rice, uncooked
-
3 Tbspyellow onion, chopped
-
2 clovegarlic, minced
-
1/2 tspsalt, kosher variety
-
1/2 tspground cumin
-
1/2 tspdried oregano
-
black pepper, freshly ground, to taste
-
1 Tbsptomato paste
-
14 ozchopped tomatoes, drained, one can
-
1 1/2 cchicken stock, not broth
- ADDITIONAL ITEMS

1 lglime
-
cilantro, for garnish
-
black olives, sliced
- OPTIONAL ITEMS

crushed red pepper flakes
-
paprika, hot or mild

chopped jalapeno

sour cream

2You can use fresh tomatoes for this dish; however, I find that canned tomatoes work quite well. 3Gather your Ingredients (mise en place).

4Add the butter and oil to a saucepan over medium heat.

5Chef’s Note: the saucepan should have a tight-fitting lid, and be big enough to hold all the ingredients… this is a one-pan recipe.

6When the foaming subsides, add the rice, and stir to combine with the oil and butter.

7Continue to stir until the rice begins to turn translucent, about 3 – 5 minutes.

8Add the onions and garlic, and stir for an additional 2 minutes.

9Add the salt, cumin, oregano, black pepper, and stir to combine, about 30 seconds.

10Add the tomatoes, and tomato paste.

11Stir to combine, about 30 seconds.

12Add the chicken stock, stir to combine, reduce the heat to medium low, cover, and allow to simmer for 20 minutes.

13Take off the heat, and fluff with a fork or wooden spoon.

14PLATE/PRESENT

15Before serving, cut the lime in half, and squeeze half over the warm rice, then cut the remaining half into wedges, and serve with the rice, garnish with chopped cilantro (if using). Enjoy.
