This quick and easy to make, savory dish is very filling. It makes a great side for almost anything.

Ingredients For rice & leek bake

500 gsliced leeks

400 gground lamb

1 lgonion, diced

200 grice, long grain

1 1/2 ptlamb stock

1/2 tspsea salt

1/4 tspblack pepper

How To Make rice & leek bake

1Preheat oven to 350 degrees F.

2In a frying pan add olive oil and leeks, and fry until the leeks start to brown.

3Next add the onions and the ground lamb, fry until everything is browned; stirring constantly.

4Now add the rice and stir well, you want the rice to be coated in all the juices.

5Next, add the stock, salt and pepper and bring to a boil, and allow to boil for 2 - 3 minutes.

6Pour into a baking pan and place on the bottom self to bake for 1 hour. When all the liquid has evaporated and the rice is soft, it is ready to enjoy!

7Before serving, turn off the oven and open the door for 10 minutes to allow the the dish to cool.
