Vibrant red stir fried tomato rice is best when made with leftover chilled rice. You want the rice to be dry enough not to clump when it is fried. You won't be sorry that you tried this lovely flavored rice. Perfect with grilled meats of all types.

Ingredients For red rice

2 crice, jasmine, cooked - cold

2 Tbspbutter,

1 lggarlic clove, finely minced

1 Tbsptomato paste

1/2 - 1 Tbspfish sauce

1 - 2 tspbrown sugar

1 tspmaggi seasoning

2green onions, thinly sliced, garnish, optional
How To Make red rice

1Put a frying pan on medium-high heat and add butter.

2Once the butter has melted, add the garlic, cooking for 2 - 3 minutes, until light golden brown.

3Now add in the rice and tomato paste, mixing well. Stir constantly to keep rice from burning.

4Next add the fish sauce, brown sugar and Maggi seasoning, make sure to mix well so that all the flavors can blend together.

5Fry another 2 - 3 minutes, taste, adjust seasonings if necessary.

6Transfer to a bowl, garnish with green onion slices and serve immediately.
