Vibrant red stir fried tomato rice is best when made with leftover chilled rice. You want the rice to be dry enough not to clump when it is fried. You won't be sorry that you tried this lovely flavored rice. Perfect with grilled meats of all types.

Ingredients For red rice

  • 2 c
    rice, jasmine, cooked - cold
  • 2 Tbsp
    butter,
  • 1 lg
    garlic clove, finely minced
  • 1 Tbsp
    tomato paste
  • 1/2 - 1 Tbsp
    fish sauce
  • 1 - 2 tsp
    brown sugar
  • 1 tsp
    maggi seasoning
  • 2
    green onions, thinly sliced, garnish, optional

How To Make red rice

  • 1
    Put a frying pan on medium-high heat and add butter.
  • 2
    Once the butter has melted, add the garlic, cooking for 2 - 3 minutes, until light golden brown.

    Now add in the rice and tomato paste, mixing well. Stir constantly to keep rice from burning.

    Next add the fish sauce, brown sugar and Maggi seasoning, make sure to mix well so that all the flavors can blend together.

    Fry another 2 - 3 minutes, taste, adjust seasonings if necessary.

    Transfer to a bowl, garnish with green onion slices and serve immediately.
