I have had this recipe for years. A friend from Louisiana gave me her dads recipe. Her dad was well known for his beans... Love this with a slice of great cornbread! Enjoy! My photos

Ingredients For red beans and andoille sausage

1 lbdry kidney beans or red beans
-
1/4 colive oil
-
1 lgonion, chopped

1green or red bell pepper, chopped

3 - 4 cloveminced garlic
-
2 stalkcelery, chopped
-
6 cwater
-
2bay leaves
-
1/2 tspcayenne pepper
-
1/2 Tbspcajun seasoning ( i use tony chachere's

1 tspdried thyme
-
1/4 tspdried sage
-
1 Tbspdried parsley
-
1 lbandouille sausage, sliced
-
white rice
How To Make red beans and andoille sausage

1Rinse beans, and then soak in a large pot of water overnight.

2In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.

3Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.

4Stir sausage into beans, and continue to simmer for 30 minutes. Meanwhile, prepare the rice. Serve beans over the white rice. Sticky rice is better if can make. This is even better the next day...Yum!
