A quick version of risotto that doesn't need all of the stirring of a more traditional one. From Back of the Box recipes.

Ingredients For quick 'n' easy risotto

2 Tbspolive oil

1 cchopped mushrooms
-
1/3 cchopped onion

1 carborio rice, uncooked
-
1 1/2 cwater or chicken stock

1/2 cdry white wine
-
3/4 cromano cheese, grated

1/4 cmilk
How To Make quick 'n' easy risotto

1Heat oil in saucepan on medium heat. Add mushrooms and onion. Cook and stir 5 minutes or until tender.

2Stir in rice, water and wine. Bring to boil; cover. Reduce heat to low. Simmer 20 minutes or until rice is tender.

3Stir in 1/2 cup of the cheese and milk. Serve with remaining cheese.
