Originating in New Orleans, Popeye's is the name of a fast food chain specializing in New Orleans style fried chicken...and it is wonderful! One of my favorite side dishes at Popeye's is the Cajun Rice. I found this recipe on copykat.com and it is so very near the same excellent flavor found at Popeye's, I just have to share.

Ingredients For popeye's cajun rice

  • 2 c. rice cooked in 4 c. chicken broth
  • 1 lb
    ground chuck or pork sausage
  • 1/2 c
    chopped bell peppers
  • 1/3 c
    chopped green onions
  • 1 clove
    garlic, minced
  • 1/2 c
    diced celery
  • 1/2 tsp
    tony's cajun seasoning
  • 1/4 tsp
    red cayenne pepper
  • 1/4 tsp
    black pepper
  • 1/4-1/3 c. water

How To Make popeye's cajun rice

  • 1
    Cook meat, onions, bell peppers, garlic and celery in 12" skillet until meat is no longer pink and onions are tender. Drain well and return to skillet.

    Add cooked rice, water, cajun seasoning, cayenne pepper, and black pepper to the meat mixture in the skillet.

    Simmer covered for 10-12 min. or until water is absorbed. Stir as needed to prevent sticking. Turn heat off and leave meat and rice mixture covered about 5 min. before serving.
