6 ozpackage long-grain and wild rice

1/2 cpine nuts, toasted

2 Tbspfresh parsley, chopped

2-4 Tbspolive oil

2 Tbsporange zest

2 Tbsporange juice

1/4 tspground black pepper

freshly grated parmesan cheese

1/2 cwater
How To Make pine nut and orange wild rice

1Combine the raisins and 1/2 cup water in a small saucepan. Brink to a boil; cover, reduce heat, and simmer for 3 minutes. Remove from the heat and let cool. Drain and set aside.

2Cook the rice according to the package directions.

3Combine the rice, reserved raisins, pine nuts, and the next 5 ingredients in a medium bowl. Stir well. Sprinkle with Parmesan cheese and serve.
