Ingredients For pea and sweet pepper rice

  • 1/4 c
    onin, finely chopped
  • 2 Tbsp
    butter
  • 3/4 c
    long grain rice, uncooked
  • 1/4 tsp
    thyme
  • 1/8 tsp
    pepper
  • 2 c
    chicken broth
  • 1 c
    peas, frozen
  • 1/2 c
    red pepper, diced
  • 1/3 c
    parmesan cheese, shredded
  • 1/4 c
    white wine
  • additional parmesan for topping

How To Make pea and sweet pepper rice

  • 1
    Sauté onion in butter until tender.
  • 2
    Add rice, cook and stir over medium heat until rice is light brown
  • 3
    Add wine, thyme and pepper. Cook, stirring constantly for 2 minutes.

    Add broth, bring to boil, reduce heat. Simmer covered 15 minutes.

    Add peas and sweet pepper. Stir until heated through.
  • 6
    Remove from heat, stir in the 1/3 cup parmesan cheese.

    Serve with additional cheese.
