Ingredients For pea and sweet pepper rice

1/4 conin, finely chopped

2 Tbspbutter

3/4 clong grain rice, uncooked

1/4 tspthyme

1/8 tsppepper

2 cchicken broth

1 cpeas, frozen

1/2 cred pepper, diced

1/3 cparmesan cheese, shredded

1/4 cwhite wine
-
additional parmesan for topping
How To Make pea and sweet pepper rice

1Sauté onion in butter until tender.

2Add rice, cook and stir over medium heat until rice is light brown

3Add wine, thyme and pepper. Cook, stirring constantly for 2 minutes.

4Add broth, bring to boil, reduce heat. Simmer covered 15 minutes.

5Add peas and sweet pepper. Stir until heated through.

6Remove from heat, stir in the 1/3 cup parmesan cheese.

7Serve with additional cheese.
