patsy's yellow rice

We love yellow rice. I buy a spice in the Hispanic section of the store called Bijol,it says it's a coloring and seasoning.It says it's all natural and no preservatives. It really has no flavor it just makes the rice yellow. I don't measure when I cook,but I just made this rice so these measurements are approximate. Use more Bijol if you want a darker colored yellow rice.If your broth is salty,do not add additional salt. If I use a bouillon cube,no salt is needed. Taste the broth before you cook the rice. The pimiento is optional.I sometimes add green bell pepper for color as well.

2 cloves garlic,minced

1/2 medium onion

1 c rice

1/4 c chopped pimientos,drained

2 c chicken broth

1 t. salt

1/2 t. black pepper

1/4 t bijol
How To Make patsy's yellow rice

1Heat oil in a saucepan. Add garlic and onion unit onion is tender. Add rice and toast just a bit. Add pimiento,broth,salt,pepper and bijou.Bring to a boil. Turn the heat as low as possible and cook rice 20 minutes. Turn off heat and let the rice sit covered a few minutes.
