This is a great side for anything. If serving with beef, I would substitute beef broth instead of chicken broth.

Ingredients For parsleyed brown rice

  • 1 c
    onion, chopped
  • 1 c
    celery, chopped
  • 1 c
    chicken broth
  • 1 c
    water
  • 4 oz
    can mushroom stems and pieces, drained
  • 1 tsp
    salt
  • 1 tsp
    poultry seasoning
  • 1/4 tsp
    pepper
  • 1 c
    long-grain brown rice, uncooked
  • 1 c
    fresh parsley, chopped

How To Make parsleyed brown rice

  • 1
    Combine the first 8 ingredients in a large saucepan; bring to a boil.

    Stir in rice; cover; reduce heat, and simmer for 45 minutes of until the rice is tender and the liquid is absorbed.

    Stir in the parsley. Serve immediately.
