mushrooms and wild rice
When we lived in northern Wisconsin, we had easy access to wild rice. I still have some and thought I'd try this combo of ingredients. We like wild rice with chicken dishes.

Ingredients For mushrooms and wild rice

1/2 cwild rice, uncooked

1 cchicken broth
-
1/2 conions, chopped

1 clovegarlic

8 ozsliced portabello mushrooms (mini-bellas)

1/2 croasted red pepper, cut into strips

1 Tbspfresh parsley, minced

1 tspdijon mustard - whole grain or regular

salt and pepper, to taste

sesame seeds, for garnish
How To Make mushrooms and wild rice

1Rinse and drain wild rice. Bring to boil in the chicken broth and simmer, covered, until liquid is absorbed. About 1/2 hour.

2When rice is almost done, heat olive oil in skillet, sauté onion until starting to turn translucent. Add garlic and mushrooms. Continue to sauté until mushrooms have released liquid.

3Add red pepper strips, wild rice, seasonings. Stir together until hot. Stir in parsley. Sprinkle sesame seeds on top of each serving.
