Ingredients For mom's california rice

8 slicebacon

1/2 ccelery
-
3/4 lbsliced mushrooms

1 1/2 cboiling water

1 pkgdry onion soup mix

1 ccanned tomatoes, mashed up

1 1/3 cinstant rice

1 cgrated sharp cheddar
How To Make mom's california rice

1Fry bacon until crisp. Crumble and set aside. In same pan, using bacon drippings, add celery and mushrooms. Fry until tender.

2In a separate bowl, stir together the boiling water, tomatoes, soup mix, rice and 1/4 cup of cheese. Add celery and mushroom mixture as well as the crumbled bacon. Mix it all together and put in a 2 quart baking dish.

3Cover with remaining cheese and bake at 375 F for 30 minutes or until rice is tender.
