A hearty, flavorful, and easy dish that's a great side, and is even hearty enough to be a main dish, especially when topped with grated cheese! This recipe reheats wonderfully, which is good since it makes a lot! I got it from the blog Whole Eats and Whole Treats

1 cbrown rice

2 Tbspoil

1small onion, chopped

3 cangarlic, minced

1red bell pepper, chopped

2 canblack beans, drained and rinsed

1/2 tspsalt
How To Make mexican rice skillet

1While the rice is cooking, heat the oil. Add all of the vegetables and the salt and cook through.

2When the rice is done, stir it in with the other ingredients. Serve with grated cheese melted on top.
