This is one of my moms old recipes from Family Circle. She always tried to get my dad to try new foods. Some he'd try, some, not so much. We kids loved this, dad not so much, ha!

Ingredients For mexican rice - family circle 1972

1/2 conion, chopped

1 clovegarlic, minced

2 tspvegetable oil

1 crice, uncooked
-
2 mdtomatoes, peeled,seeded and chopped

1 tspchili powder
-
1 tspsalt
-
1 cancondensed beef broth
-
1/2 cwater
How To Make mexican rice - family circle 1972

1In a large skillet, saute onions and garlic on med. heat, in oil till softened, about 5-7 minutes.

2Add rice and cook over med. heat stirring constantly until mix has become golden brown.

3Add tomatoes, chili powder, salt, broth and water. Bring to a boil, cover and reduce heat to low. Simmer covered up to 45 minutes or until all liquid is absorbed.
