I lost my husband in Jan. after a long battle with cancer. This dish was brought to my home the day of the funeral. My family enjoyed it so much, I requested the recipe from my friend.

Ingredients For mexican rice

1 ccook rice and set aside

1 medonion,chopped

1 medgreen bell pepper, chopped

1 or 2jalapeno peppers, chopped

1/2 stickbutter, melted

1 tspsugar

2- 17 ozcream style corn
-
1 cmild cheddar cheese, grated
How To Make mexican rice

1Saute onions and peppers in butter. Add sugar. Add rice, veggies and corn. Mix well and spoon into lightly greased casserole dish. Sprinkle with cheese. Bake @ 350 for 40-45 minutes or until cheese melts.
