Ingredients For mexican rice

1 cchopped onion

1/4 cbutter, melted

4 ccooked long-grain rice

`12 ozcarton small-curd cottage cheese

1 lgbay leaf, crushed

1/2 tspsalt

1/8 tsppepper

2 canchopped green chiles, drained (4 ounces each)

2 csharp cheddar cheese, shredded (8 ounces)

fresh parsley, chopped
How To Make mexican rice

1Saute onion in butter in a skillet 3 minutes or until tender. Combine sauteed onion, rice, and the next 4 ingredients. Mix well.

2Layer rice mixture and chiles in an 11 x 7 x 1 1/2 inch dish; sprinkle with cheese and parsley.

3Bake, uncovered, at 375° for 25 minutes or until the cheese melts.
