mexican essentials: easy/peasy spanish rice
Served my Beef Birria for Sunday brunch and made some Spanish rice to go with it. The rice has some standard ingredients, with one or two of my own. Everyone loved it, and all plates came back to the pantry clean. After trying this recipe, you will think twice about using the boxed variety. So, you ready… Let’s get into the kitchen.

Ingredients For mexican essentials: easy/peasy spanish rice

1 Tbspolive oil, extra-virgin variety

1 Tbspsweet butter, unsalted

1 clong-grain white rice

1 cchicken stock, not broth

3/4 cfiltered water

2 Tbsptomato paste
-
1 Tbspmexican flavor base, link supplied in the notes

1 mdgarden-fresh tomato, skin removed, seeded, then diced

2You will need a medium-size saucepan with a lid to make this recipe.

3Mexican Flavor Base My Mexican flavor base works great with this recipe, here is the link: https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/south-of-the-border-essentials-flavor-base.html If, however, you do not wish to make it, you can substitute the following spices, and continue on with the recipe as written. 1 1/2 teaspoons ancho chili powder 1 teaspoon ground cumin 1/2 teaspoon garlic salt 1/2 teaspoon dried oregano

4Gather your ingredients (mise en place).

5Whisk together the chicken stock, filtered water, tomato paste, and Mexican flavor base (or dried spices) together and reserve.

6Add the butter and oil to a saucepan over medium heat, then wait for the butter to melt and stop foaming.

7Add the rice and coat with the butter/oil mixture. Stir for about a minute or two.

8Add the reserved liquid, and diced tomatoes, then set the heat to medium low (just a simmer).

9Cover and allow to simmer for about 20 minutes.

10If you are using a different rice, other than long-grain white rice, follow the instructions on cooking time for that specific rice.

11After the cooking time is complete, remove from the heat, and fluff with a fork.

13Serve with your favorite dishes. In this case I am serving it with my beef birria and some warm homemade flour tacos. Enjoy.
