mediterranean rice (rice cooker)
This is an easy and tasty seasoned rice side dish. Mixed vegetables work well in place of the peas & carrots. I use my small 1 liter (1 quart), Cook & Warm rice cooker for this.

Ingredients For mediterranean rice (rice cooker)

1 1/2 cdry jasmine rice

2 1/3 cchicken broth

3/4 tspsalt

1/2 tspground cinnamon

1/4 tspground cloves
-
1/4 tspground nutmeg

1/2 tspground turmeric
-
2bay leaves
-
black pepper, as desired
-
2/3 cfrozen peas and carrots
How To Make mediterranean rice (rice cooker)

1Add all ingredients, except the peas and carrots, to your rice cooker, season with black pepper as desired. Stir to mix together. Press the Cook button and let the rice cooker complete its cook cycle.

2When the rice cooker switches to Warm setting, uncover and fluff with a paddle, add the frozen peas and carrots, mix in. Cover and leave on the Warm setting for 5-10 minutes.

3When the peas and carrots are heated through and tender, unplug the cooker, fluff again with the paddle.

4Serve as a side dish with any meal. Enjoy.
