Ingredients For luau rice

2 cbasmati rice

2 cwater
-
2 Tbspcoconut oil

1 smonion, chopped (about 1/2 cup)

1 tspginger, freshly grated (or 1/4 teaspoon dried)

2 clovegarlic, chopped
-
1/2 cthinly sliced spam or deli ham
-
1/2 cdesiccated coconut
-
1 tspchicken powder (or crush a bouillon cube into a powder)

1/4 tspwhite pepper
-
1 cfresh pineapple, chopped (can use canned)

macadamia nuts, crushed, for garnish, optional

t Tbspgreen onions, chopped for garnish
How To Make luau rice

1The day or two before, wash your rice thoroughly add 2 cups of rice and 2 cups of water to your pan and cook on stove top or steamer. Allow rice to completely cool and place in the refrigerator over night.

2Toast your coconut in a non-stick skillet until in is toasty brown. Set aside.

3Place your coconut oil, onions, garlic, ginger in the pan until aromatic. Add the spam and cook quickly until lightly golden.

4Add your cooked basmati rice, chicken powder and white pepper and mix quickly in your pan until all of the rice is covered evenly with the coconut oil and seasoning.

5Add the pineapple, green onions and toasted coconut back into the pan and continue stirring quickly, just until warmed.

6Reserve a little toasted coconut on the side for garnishing.

7Serve on plate and garnish with toasted crushed macadamia nuts, toasted coconut and green onions.
