Ingredients For judy's green rice

2 clong grain white rice, uncooked

4 cchicken broth
-
1/2 cwater
-
2bay leaves
-
1/2 cshallots, sliced
-
1/2 cparsley, chopped
-
1/2 cwhite onion, minced
-
1 ccelery, minced with tops
-
1 stickbutter or margarine
-
1/2 tspthyme
-
1 tspsalt
How To Make judy's green rice

1Add bay leaves to chicken broth and bring to a boil.

2Add rice, stir, and return to a boil.

3Cover and cook over low heat for 20 minutes.

4Remove from fire, leave cover on and let sit for 10 minutes.

5Sauté onions, shallots and celery lightly in butter until soft. Add parsley, thyme and salt.

6Combine with rice and mix.

7Add 1/2 cup water if rice mixture seems dry and stir.

8Pour into buttered two quart dish and bake at 350 degrees for 15-20 minutes.
