Ingredients For judy's green rice

  • 2 c
    long grain white rice, uncooked
  • 4 c
    chicken broth
  • 1/2 c
    water
  • 2
    bay leaves
  • 1/2 c
    shallots, sliced
  • 1/2 c
    parsley, chopped
  • 1/2 c
    white onion, minced
  • 1 c
    celery, minced with tops
  • 1 stick
    butter or margarine
  • 1/2 tsp
    thyme
  • 1 tsp
    salt

How To Make judy's green rice

  • 1
    Add bay leaves to chicken broth and bring to a boil.
  • 2
    Add rice, stir, and return to a boil.
  • 3
    Cover and cook over low heat for 20 minutes.

    Remove from fire, leave cover on and let sit for 10 minutes.

    Sauté onions, shallots and celery lightly in butter until soft. Add parsley, thyme and salt.

    Combine with rice and mix.

    Add 1/2 cup water if rice mixture seems dry and stir.

    Pour into buttered two quart dish and bake at 350 degrees for 15-20 minutes.
