This recipe was given to me while I was visiting friends in PV, Mexico. Even though most of us don't cook with lard, it is essential in this recipe to give it the authentic taste. This is so good! Try it, you'll love it! Blondie

Ingredients For irene's authentic mexican rice

3 Tbsplard

1 mdonion

3-4 clovegarlic or 1 tbsp

1/2 cdiced carrots

2 cuncooked white rice

1/2 tspdried mexican oregano or 1 tbs fresh

1/2 tsppure ground cinnamon
-
1 Tbspground cumin
-
4 cwater
-
1 cfrozen green peas or frozen green beans

1 cfresh cilantro, rough chopped
How To Make irene's authentic mexican rice

1Ina 14" frypan, or 12" deep skillet, heat lard on med-hi. When it is hot, add onion; saute`for 4 minutes, or until onion starts to browned around the edges (this is important for flavor.)

2Lower heat to medium. Add garlic and carrots; saute` for 2-3 minutes (don't allow the garlic to burn.

3Add rice; saute` till dark tan. Now add oregano, cinnamon and cumin. Stir well. Add water slowly to pan. (Avoid steaming your hand or arm.

4When rice cmes to a boil, lower the heat source to a low simmer. Cover with tight fitting lid. DO NOT LIFT LID FOR 22 MINUTES.

5Now add peas or green beans. DO NOT STIR; cover with lid and remove from heat; set aside for 5 minutes. Now Toss in cilantro just before stirring rice.
