I like rice and this is a good quick fried rice that you can whip up on those busy week nights.

Ingredients For egg fried rice

4eggs

1green onion, chopped

1/3 cfrozen peas

3 Tbspvegetable oil

4 ccooked long grain rice

1 dashsalt and pepper or seasonings of choice
How To Make egg fried rice

1Beat eggs with 1 teaspoon of the green onion and dash of salt.

2Cook peas in simmering water for 1 min.

3Heat wok over high heat, add oil. When oil is very hot, reduce heat and add the eggs. Lightly scramble. Add the rice before eggs are set. Increase heat, then stir to separate the grains of rice and break eggs into small pieces.

4Add peas and rest of the green onion. Add desired seasonings. Stir constantly for 1 min.
