easy spanish rice (rice cooker)
Easy is an understatement, and this is delicious, made again on 21 Mar 22022, and been making this since 2018 and the family loves it!. A nice change from plain white rice for a side. I make this as written in my small 1 liter (1 quart) rice cooker as well. As a variant, you can use a can of whole tomatoes with juice, just chop the tomatoes up.

Ingredients For easy spanish rice (rice cooker)

2 cdry white rice, i use jasmine

1 candiced tomatoes with juice, (400 g/14-15 oz)

3 1/2 cwater

1small onion, diced
-
3chicken stock cubes, crushed

1 Tbspchili powder
-
1 tspsalt
-
1 tspground cumin
-
1/2 tspgarlic powder
How To Make easy spanish rice (rice cooker)

1Place the rinsed rice in the bottom of the rice cooker and then add the diced tomatoes, onion, stock cubes, spices, and water. Stir together, cover and set your rice cooker to Cook setting.

2When the cooker switches to Warm, mix with a large spoon, it will be wet, taste and mix in salt if desired.

3Serve as a side dish, enjoy.
