This Spanish rice has a bit of a bite to it. Just so you know before serving to the "little ones".

Ingredients For easy spanish rice

3 1/2 cups pre-cooked white rice

1 sm - med yellow onion diced

3 celery stalks diced
-
1 10oz can ro-tel "original" diced tomatoes w/green chilies

1 small can tomato sauce
-
1/2 teaspoon chili powder
-
1 teaspoon lemon juice
-
1 tbs sugar (optional)
-
few shakes garlic powder
-
1/3 cup water
-
salt/pepper to taste

2 tbs cooking oil
How To Make easy spanish rice

1In frying skillet add oil and brown together onion and celery until soft. Add Ro-tel tomatoes, add all spices, sugar and lemon juice. When tomatoes just begin to bubble, add tomato sauce rinsing can with 1/3 cup of water. When sauce is near boiling , lower heat and add rice and stir until sauce is mix well through out the rice. Salt and pepper to taste or diet.
