This recipe was in Ma's recipe box we found in NC in July 2019. It was with a Chicken Breast Veronique recipe (also in JAP).

Ingredients For curried rice, ma

  • 1 c
    rice
  • 1 sm
    apple, peeled and cored
  • 3 Tbsp
    butter
  • 1/2 c
    finely chopped onion
  • 1 clove
    garlic, finely minced
  • 1 Tbsp
    curry powder
  • 1/2
    bay leaf
  • 1 1/2 c
    fresh or canned chicken broth

How To Make curried rice, ma

    Measure rice and set aside. Cut apple into slices about 1/4" thick. Stack slices and cut into strips about 1/2" thick. Cut strips into 1/4" cubes. There should be one cup. Do not use more. Set aside.

    Heat 2 T butter in saucepan and add onion and garlic. Cook until onion wilts. Add the apple and curry powder and stir. Add rice, bay leaf and broth. Cover closely and cook exactly 17 min. Add remaining T butter and fluff it into the rice, with a fork.
