Ingredients For costa rican rice

1 Tbsppeanut oil

1/3 cdiced red or green bell pepper

1/2 cdiced onion

2 clong grain rice, well rinsed

1 1/3 cwater

2 tsptomato paste

1/4 tspfreshly ground black pepper

2 tspsalt
-
2 Tbspfreshly squeezed lime juice

1 tspolive oil
How To Make costa rican rice

1Heat the peanut oil in a medium saucepan. Add the bell pepper and onion; cook over medium heat, stirring often, until the onion begins to brown.

2Add the rice, water, tomato paste, black pepper, salt, and lime juice; mix well. Bring the liquid to a boil.

3Add the olive oil to the rice mixture; reduce the heat, and simmer, covered and undisturbed, until all the liquid is absorbed, about 20 minutes.

4Serve hot.
