This goes great with pork chops, chicken and beef. It adds a little vegetables to your meal and makes the plate looks prettier.

Ingredients For confetti rice

  • 1 c
    uncooked , long grain rice
  • 1 1/2 c
    chicken broth
  • 1/2 tsp
    kosher salt
  • 1/2 c
    cooked green peas
  • 1/2 c
    cooked, diced carrots
  • 1/4 c
    cooked, diced red bell pepper

How To Make confetti rice

  • 1
    In a mediun sauce pan with a tight fitting lid, combine rice, broth and salt.

    Bring to a boil and stir once.

    Cover and reduce heat to low.
  • 4
    Simmer for 18 minutes. DO NOT lift the lid or stir.

    Remove from heat and let stand covered for 5 minutes.

    Add the peas, peppers, and carrots. Stir with a fork to fluff.

    Serve immediately.
