This rice is the best; it is full of flavor. I created it using my favourite seasonings. When made with Jasmine rice, it makes a wonderful side dish. I hope that you will enjoy it. Don't let the long list of ingredients deter you - it's worth it. You can always sub or omit if you don't like an ingredient. If you can't find lemongrass or lime leaves, sub with a piece of lemon and lime rind instead. It won't taste the same but it's better than omitting them. Please don't leave the cilantro out, it ties all the flavors together.

Ingredients For coconut rice for caron

2 Tbsppeanut or vegetable oil

1 smsweet onion, diced

3/4 cchicken stock or broth

1/4 cunsweetened pineapple juice

1 ccoconut milk
-
1/4 ccold water
-
1/2 tspsea salt
-
1/4 tspfreshly ground black pepper

1 tspchili paste (with holy basil leaf)

1 smchili pepper
-
1 clovegarlic, coarsely crushed

1/2"fresh ginger, peeled
-
2fresh or dried lime leaves
-
2 1/2"fresh lemongrass, coarsely chopped

1 cjasmine rice, rinsed
- GARNISHES

1/2 cshredded unsweetened coconut, toasted

1 lggreen onion, finely sliced

1/8 cgolden raisins
-
1/4 cfresh cilantro, finely chopped
How To Make coconut rice for caron

1Heat oil in a large pot over medium heat.

2Saute the onions for 5 minutes, then add the chicken stock, pineapple juice, coconut milk, and water, bringing the mixture to a hard boil.

3Add sea salt, black pepper, chili paste, chili pepper, garlic, ginger, lime leaves, lemongrass, and rice to the boiling liquid.

4Stir well and reduce heat to low. Cover and simmer for 20 minutes, or until all liquid has evaporated.

5Once the rice is cooked, take the rice off the heat. Remove the chili pepper, garlic clove, piece of ginger, lemongrass pieces and lime leaves.

6Fluff the rice with a fork; cover and let sit for 5 minutes.

7When ready to serve, garnish with the toasted coconut, sliced green onions, golden raisins and finely chopped cilantro.
