This is delicious rice and very versatile. It goes with just about any meat, poultry or any type of cuisine. We like to enjoy it with a simple sauce made from squash. Enjoy! The photo is my own. Adapted from a recipe by Christopher.

    cups long grain rice, rinsed and drained
  • 1
    lime juiced and 1 teaspoon of zest
  • 4
    cups water
  • 1
    teaspoon salt
  • 1/4
    cup chopped cilantro
  • 2
    tablespoons olive oil

    COOK'S TIP: This rice is delicious cooked in this manner for just plain fluffy white rice, or add the rest of the ingredients to make Cilantro Lime Rice. We like to make a simple delicious sauce from squash to put on top of the rice. It is delicious and goes well with American or Asian food. The cilantro, lime and brown sugar is wonderful! The recipe is below. Enjoy!

    COOK THE RICE In a large pot, combine rice, water, 1/2 tablespoon olive oil and salt. Boil on high for 3 minutes. Reduce to low, cover and continue cooking for 15 minutes. Turn off heat and keep covered for an additional 5 minutes. Fluff with a fork and add seasonings : oil, lime juice and lime zest. Add more salt if needed.

    ADD THE CILANTRO Stir into the pot of rice gently, mixing well.

    THIS IS HOW IT LOOKS!

    SIMPLE SQUASH SAUCE Wash 3 or 4 large crookneck squash and cut into 1 1/2 inch chunks. Put into a large pan, cover with water, bring to a boil and simmer until tender. Then drain the sqaush very well, and pour it back into the hot pot, add 1/2 stick butter, 1/2 cup brown sugar and stir. Serve over the Cilantro Lime Rice. Trust me, it is delicious! You can also eat the squash as a side dish if you wish.
