cilantro lime rice

I made beef quesadillas recently, and I wanted a light rice recipe to go with it. I found several recipes for Cilantro Lime Rice, but non sounded quite like what I was looing for. So I combined the best parts of a few recipes that sounded the most like what I was looking for, and this is what I came up with. It turned out quite refreshing and was a great light side dish.

Ingredients For cilantro lime rice

  • 1 Tbsp
    canola oil
  • 2 clove
    garlic, minced
  • 1/2 md
    onion, chopped
  • 1 1/2 c
    white long-grain rice (or basmatic rice)
  • 1/2 tsp
    salt
  • 3 c
    low-sodium chicken broth
  • 2 md
    limes, zested and juiced
  • 1/2 c
    chopped cilantro (more or less, as preferred)

How To Make cilantro lime rice

    Heat oil in a large saucepan. Add onion and garlic, and sauté over medium heat for about 2 minutes or until onion is soft. Add rice and salt, and cook 3 minutes.

    Add the broth and stir. Add half of the lime juice and lime zest, and bring to a boil. Once it reaches a boil, turn heat to very low, cover pan, and let it simmer for 10 to 15 minutes or until rice has absorbed all the liquid. Add more broth (or water) if needed).

    Just before serving, add remaining lime juice, lime zest, and fresh chopped cilantro, and serve immediately.
