Ingredients For cilantro lime rice

1 1/2 cwater

1 1/2 cchicken broth (or vegetable broth)

1 1/2 clong grain rice

1/2 tspsalt

1 tsplime zest
-
2 Tbspfreshly squeezed lime juice

1/2 ccilantro, roughly chopped

2 Tbspbutter
How To Make cilantro lime rice

1Measure rice into a pot. Add salt, water and broth. Bring just to a boil. Reduce heat and add butter. Cover and cook 15-20 minutes until liquid is absorbed and rice is soft.

2While the rice is cooking, zest the lime. Squeeze the lime juice into a bowl with the zest. Set aside.

3Chop the cilantro. Set aside.

4When the rice is done cooking, stir well. Add the lime zest, juice and cilantro.

5Stir well. Keep covered until served.
