This is a nice rice pilaf to serve with pork. I love apples with pork and the apple cider adds a sweetness to the pilaf.

Ingredients For cider rice pilaf

1 clong grain rice, uncooked

3 Tbspbutter, melted

3/4 cchopped celery

1/2 cchopped onion

1 tspgrated orange rind

1/4 tspsalt

1/4 tsppepper

1/4 cminced fresh parsley, divided

1/4 tspdried rosemary, crushed

1 3/4 cboiling apple cider
How To Make cider rice pilaf

1Saute rice in butter in a large skillet over medium heat until golden.

2Add the celery and the next 4 ingredients, and saute 5 minutes. Stir in 2 tablespoons parsley and rosemary. Stir in boiling apple cider; cover, reduce heat, and simmer 30 minutes or until rice is tender and liquid is absorbed.

3Sprinkle with the remaining 2 tablespoons parsley. Serve immediately.
