My son suggested this with dinner tonight. (We had Tilapia with lemon butter & dill) It was so good! Hubby even said it tasted a lot like Risotto. :) A very quick & easy side dish.

Ingredients For chicken parsley rice

  • 1 c
    rice (long cooking kind)
  • 2 c
    water
  • 1 Tbsp
    chicken boullion
  • 2-3 Tbsp
    butter
  • 2 Tbsp
    parsley
  • 1/2 c
    shredded cheese (i used 4-cheese pizza blend)

How To Make chicken parsley rice

    In a saucepan, combine all ingredients.

    Bring to a low boil, then turn down to simmer for 15-20 minutes, or until rice is tender and liquid absorbed.

    Stir frequently to keep the rice from sticking.
