This is a great side dish for fish, chicken or any other meat. You can also create your own rendition with whatever you have in the house, but this is a great start. The vinaigrette is key though.

Ingredients For brown rice medley
- BROWN RICE

2-3 cbrown rice, cooked

2shallots, chopped

1 ccarrots, grated

1/2 cgolden raisins

1/2 cred bell pepper, chopped

1/2 cwalnuts, chopped

1/4 cchampagne-mustard vinaigrette (recipe below)
- CHAMPAGNE-MUSTARD VINAIGRETTE

1/4 cchampagne vinegar

1 tspsugar
-
1 Tbspshallot, chopped

2 tspdijon mustard
-
1/2 colive oil
-
dashsalt and pepper
How To Make brown rice medley

1Brown rice - I recommend cooking good brown rice, which takes about 45 minutes. The flavor is much better than the minute brown rice. Another tip for more flavor is to cook the rice in half vegetable broth, half water. Mix all ingredients together in a bowl.

2Prepare vinaigrette by whisking all ingredients together until well blended.

3Drizzle dressing over rice, tossing gently to coat, until you achieve your desired saturation. Serve!
