Ingredients For black beans and brown rice

1 tspolive oil

1/2white onion, diced

1/2red pepper, diced

2 cloveminced garlic

1/2jalapeno, seeded and diced

1 cbrown minute rice

2 cvegetable broth

1/2 tspground cumin
-
1/2 tspcurry powder
-
1/4 tspcayenne pepper

1 can15.5 oz black beans, rinsed and drained
How To Make black beans and brown rice

1To the drained and rinsed black beans, add the cumin, curry and cayenne and set aside. In a 12 inch skillet, heat the oil. Add the onion, pepper, garlic and jalapeno and sauté for 4-5 minutes.

2Add uncooked rice and sauté for 2 minutes. Add broth, bring to a boil, cover, and lower the heat. Cook for 20 minutes.

3Add the black bean, spice mixture. Cook covered on low about 5 more minutes, until heated through.
