I'm always looking for ways to cook rice and so i came across this recipe. its super yummy in my book !

Ingredients For beans & rice

1 tspvegetable oil
-
1/2 cwater
-
1onion , chopped
-
2 clovegarlic , minced
-
1 1/2 cmushrooms, sliced

2green peppers, chopped
-
3/4 crice, instant and uncooked

3 cankidney beans, drained
-
16 ozcan whole tomatoes
-
1 Tbspchili powder
-
2 tspcumin
-
1/4 tspcayenne pepper
-
1 cmozzarella cheese , shredded
How To Make beans & rice

1Heat oil and water to a simmering . add onion , garlic,mushrooms, and green pepper, simmer until onion is tender about 10 minutes.

2add uncooked rice ,beans, and tomatoes, chili powder, cumin, and cayanne .

3cover and simmer about 25 minutes. checking occasionally to see if more water is needed .

4transfer to oven proof dish sprinkle with mozzarella . bake at 350 for 15 minutes ... Enjoy !
