baked mexican style rice

I have a bad habit of burning my rice on the stove, so found a recipe for baking it, but it was plain white rice, so found a recipe for Mexican rice and married the two....I love the fluffy texture. You can leave out the jalapeno, or use a milder or warmer pepper per your tastes. I've also used the basic baked white rice recipe and added cilantro and lime zest and juice for cilantro lime rice, it came out very good.

Ingredients For baked mexican style rice

  • 1 c
    long grain rice, uncooked
  • 1/2
    shallot or onion, finely chopped
  • 2 clove
    garlic, finely chopped
  • 1
    jalapeno, fresh, finely chopped
  • 1/2 to 1 tsp
    cumin
  • 2 Tbsp
    tomato bullion
  • 1 3/4 c
    boiling water
  • 2 Tbsp
    butter

How To Make baked mexican style rice

    Preheat oven to 375. Spray a 9 x 9 inch baking dish with non stick spray. Set aside.

    Melt butter in skillet, saute chopped veggies for 1 to 2 minutes, til softened. Add rice and saute for another 1 to 2 minutes. Pour into prepared baking dish.

    Boil 1 3/4 cup water. Add bullion and cumin. Taste and adjust seasonings per your preference. Add salt and or pepper to taste. Pour over rice mixture and stir well. Cover with foil and bake for 22-27 minutes. Mine was good at 25 minutes. Take out and let sit for 10 minutes. Fluff with fork and serve.
