This is so good. Don't tell anyone there are chicken livers in here they will never know. This recipe makes a ton so you might want to cut it in half

Ingredients For authentic cajun dirty rice
- FOR THE DARK ROUX

1/2 ccrisco oil

1/2 cflour

1 lbground pork

1 lbchicken livers cleaned and chopped

1 lgonion diced

1 ccelery

6 clovegarlic minced

1/2 cdark roux

1 Tbspcajun seasoning

1 tspsalt

6 cbeef stock

2bay leaves
-
2 Tbspworcestershire sauce

1 Tbspfresh thyme
-
1 tspblack pepper
-
1/2 cgreen onions chopped

1/4 cparsley chopped

14 ccooked rice
How To Make authentic cajun dirty rice

1For the dark roux. In a heavy pot melt the oil and get it hot. Slowly whisk in the flour and continue to whisk and cook over medium heat until dark brown dark brown about 20 to 30 minutes. Let cool and set aside.

2Heat a large pot over medium heat and add the pork, chicken livers, onions, celery and garlic. Cook and saute until meat is no longer pink. Add the dark roux and cook for 5 minutes.

3Add the Cajun seasoning, salt, beef stock, Worcestershire sauce, bay leaves, thyme, and pepper. Bring mixture to a boil, lower heat and simmer 30 minutes. Remove the bay leaves and discard. Stir in the rice and cook 5 minutes. Stir in the green onion and parsley and cook 1 minute.
