didn't want potatoes pancakes nor did I want to reheat mashed potatoes so I tried something different. These potato, parmesan, onion, corn balls were a wonderful way to use leftover potatoes. Eric dubed them "The yummy balls"

Ingredients For yummy balls from leftover potatoes

2 cleftover potatoes (i used both garlic potato chunks and mashed)

1/3 cparmesan cheese

1leftover corn on the cob, de-cobbed

1 lgegg
-
1/4 cdiced onion

2/3 tspgarlic powder

seasoned bread crumbs
How To Make yummy balls from leftover potatoes

1Mix everything but the seasoned bread crumbs together and taking tablespoon sized chunks roll them in the seasoned bread crumbs. then fry in a pan until all sides are brown and cooked through.
