This recipe was given to me by a friend who prepared it for our local symphony rehearsal dinner. The symphony members ate it up (literally!) And even my hard-to-please husband gave it a thumbs-up.

Ingredients For yams casserole

  • 1 lg
    can yams, drained and mashed
  • 1/2 c
    melted butter
  • 3/4 c
    brown sugar, firmly packed
  • 3 Tbsp
    flour
  • 1 tsp
    baking powder
  • 1 tsp
    vanilla
  • 3
    eggs, beaten
  • miniature marshmallows
  • optional: pecan halves

How To Make yams casserole

  • 1
    Heat oven to 350 degrees.
  • 2
    Mix ingredients together and put in casserole dish.
  • 3
    Bake 30 minutes or longer, if needed. Sprinkle with miniature marshmallows and a few decorative pecans halves, if desired.

    Broil a couple seconds, making sure it doesn't burn.
